Gorgeous Day

I took the opportunity to enjoy some time in the great outdoors today :)  Prior to doing some grocery shopping, I stopped at the Nazareth Park and spent about an hour enjoying the weather and doing a bit of cross stitch.

  And yes, that is ANOTHER baby cross stitch :)




Macaroni Salad Recipe


Dressing (I usually whisk together a batch and a half):
1 cup Miracle Whip salad dressing
1/4 cup salad oil
4 Tbsp. cider vinegar
4 Tbsp. sugar

1 lb elbow noodles (or any type pasta), cooked according to directions

Additives (any or all of the following, in the amount you choose, probably no more than a 1/8 cup per ingredient):
Hard boiled eggs (I usually use 3)
Diced celery
Diced carrots
Pickle relish
Diced onions
Diced red peppers (or green or yellow)
1 can tuna or chicken breast, drained

Make several hours ahead of time so dressing has time to soak into noodles.

**The above container was for our church picnic, so I actually used about 1.5 lbs of noodles and, in turn, doubled the salad dressing.

It's a Holly-Day!!

This young lady has coined herself a new holiday! And she should be allowed to do whatever she wants:) Today Holly celebrates all the accomplishments she has made in the past year since her horrific accident one year ago today.  She has made such great strides and continues doing more and more each day.  She is one of the strongest people I have ever known!  Everyone is so proud of her :)  And in the middle of all her surgeries, recovery and therapies, she managed to graduate from Susquehanna University in May despite totally missing her senior year!

This was taken earlier this evening when Alyssa stopped by after work to have a piece of cake and spend some time with Holly.

Boys And Their Toys

The red/white one is the car that I've been referring to in my Christmas letter since the late '90's!  It's finally taking shape :)  The blue one we've had since a few years after we were married-Kurt bought it for me.  I still think it was a ploy for him to get a British convertible ;)  He recently bought that baby poop colored one!

The far left one is an Austin Healey, the middle one is a Triumph and I have no clue what the one on the right is :)  Other than orange (ish).



Ribs!

We had ribs tonight for dinner. Thought I'd share how I make mine :) 

Cut the rack into pieces of 3-4 ribs, parboil on medium heat for ~1.5 hours or longer. I cook them in a water/BBQ sauce combination. Today I had 3 racks of ribs and used a whole bottle of BBQ sauce in with enough water to cover the ribs.


Once cooked thoroughly (that is what makes the ribs fall off the bones), slather BBQ sauce over ribs.



Broil in oven (no reason you couldn't do them on the grill), turn them over and apply BBQ sauce to bottom of ribs.  Broil some more.  (Optional:  apply more BBQ sauce to top of ribs and broil one last time.)
