It's A Keeper!

This was not difficult to make and as an added bonus, it was yummy :-)  There's enough for leftovers, plus I made up a lunch for me and Alyssa tomorrow.  The only negative to this was that I didn't pour all the sauce in the pan because I didn't want the roll ups to get soggy.  Minutes before I took them out of the oven, I decided to throw the extra sauce away.  My bad.  The 'gravy/sauce' sort of got sucked up into the roll ups and our left overs have no gravy now :(  It's a can of cream of chicken soup, 1/2 can milk, 1/2 can chicken broth (I stirred up some water and chicken bouillon) and 1 tablespoon of flour.  I figure I can make some more up when I heat up the leftovers, but if/when I make this again, I won't be throwing any of the sauce away!!




Chicken Roll-ups
2-3 large chicken breasts
1 can crescent rolls
1 can cream of chicken soup
1/2 soup can chicken broth (can use broth from cooking chicken)
1/2 soup can milk
1 Tbsp. flour
6 oz. shredded sharp cheddar cheese
pinch of salt and pepper

Place the chicken in a pot and cover with water, bring to a boil, reduce the heat to medium and cook til chicken is done.  Shred chicken.  Save broth.  Whisk together soup, broth, milk, flour, salt and pepper.  Unroll the crescent dough and separate into triangles.  Place a little cheese over the dough and at the larger end, place a nice heaping of chicken.  Roll up and place in 9x13 pan.  Repeat with remaining crescent rolls.  Once done, pour the soup mix around each one and then drizzle a little over the tops (not too much).  Bake at 375 degrees for 25 minutes, remove and top with a little more cheese and return to the oven for an additional 5 minutes.  Let sit for a couple minutes before serving, the soup will thicken like gravy.

I used three large chicken breasts and two cans crescent rolls, which filled the 9x13 pan.  I originally had each roll up tight against each other, then once done I decided I should spread them out a bit in order that the sauce could surround each one.  Like I said I didn't pour all the sauce/gravy in the pan, but should have saved the extra to add to the leftover roll ups.  I'll remember for next time :-)  And, also, as previously mentioned, I didn't have any broth left from cooking the chicken so I filled a coffee mug 1/2 full and threw about a teaspoon of chicken bouillon in it and made my own broth.

The only other thing I did which probably made these even tastier was that I cooked the chicken in the crockpot with my beer/spice recipe.  I threw it in the crockpot this AM before I left for church and by the time I got home from church and grocery shopping, the chicken was done.  It was so tender, that I used two forks to just pull the chicken apart and just stirred it up in the broth.

Finally, even though I doubled the crescent rolls and used three chicken breasts, I did NOT double the sauce.  Since I had extra left over, I think that should be fine.
