Yum! Shoo Fly Cake!





Crumble together in one bowl:
4 cups flour
2 cups sugar
1 tsp. salt
1 cup vegetable oil

Reserve one cup for topping

Mix in another bowl (should be large, when baking soda gets added the liquid expands):
1 cup light molasses
2 cups boiling water

Add to molasses/water:
1 Tbsp. baking soda
Mix well

Add crumbs to the liquid. Mix slightly by hand. It looks like a lumpy thin brown mix. Put in greased 9x13 pan. Sprinkle crumbs on top. Bake at 350 degrees for approximately 55 minutes.

It's delicious and very easy to make!

I love sho fly cake! My mother-in-law made all the time, when we would come down for dinner on Sundays, when my kids were little. I think it was her best tasting cakes, ever.

You can replace the oil with apple sauce and it works out quite well - honest!
