Yum! And So Easy, Too :-)

So the kids got me a Pampered Chef Rock Crok for my birthday.  I haven't used it a lot yet, in fact tonight was only the second time I've cooked with it.  I've been watching YouTube videos that show different recipes you can make in it (like roast a whole frozen chicken in 40 minutes using the microwave!).  The recipe I made tonight certainly could have been made in any pot, I happened to see it on one of the videos I watched.  

It was probably one of the easiest things I ever put together....and to top it off, it was quite tasty besides!  The woman who did the video said it was an old family recipe and is called "Two by Four," which basically meant FOUR ingredients....TWO of each:

TWO pounds ground beef, cooked (I'm sure you could use ground turkey instead)
TWO cans cannelloni beans (I think the woman said to use Pinto beans...I chose cannelloni instead)
TWO cans RoTel tomatoes
TWO cans Minestrone soup (I bought Progresso brand)

Brown the ground beef (I added Season-All), drain....and throw in the rest of the ingredients.  I drained the beans a little, but that was it.  We really enjoyed it!  It sort of had a chili taste to it...it was a bit spicy from the tomatoes.  And I can't believe how quick it was to make.

I served it with some cut up fruit and bought a loaf of Garlic Tuscan bread from Wegman's to have with it.

This Rock Crok is amazing!  I had the heat turned off on the stove for close to 45 minutes until we were ready to eat.  I figured I'd have to warm the food back up....I tasted a spoonful of it and it almost burned my tongue!!!
