Zucchini/Carrot Casserole

I found this recipe on a blog I follow that is written by a woman who posts Amish recipes.  I put it together last night and then we ended up with a change of plans, so I put it in the fridge and made it tonight.  I wasn't blown away by it, but did enjoy it.  I probably would make it again.  I used already shredded carrots from the store, only thing I needed to shred was the zucchini.  Other than that, it was very easy to throw together.



1 cup Bisquick
3 eggs
1/2 cup vegetable oil
1 cup shredded carrots
1 cup shredded sharp cheese
3 cups shredded zucchini
1 small onion, chopped
Salt and pepper to taste

Preheat oven to 350.  In a large mixing bowl, combine all ingredients together and put into an 8x8 greased baking pan.  Bake at 350 for 35-45 minutes.
