Alyssa made 4 pans of rice krispie treats last night. She cut them in to tetris shapes today and then iced them. One of the ladies she works with asked her to make them for her daughter's 10th birthday party this evening, which is an 80's theme. She then put them in to individual snack bags. They turned out pretty cool!

A God Wink Kinda' Day
What a day! Two days in fact! I started yesterday out by having lunch with Jamie and Joss. It was great just sitting there and talking and catching up! Today I went to my former place of employment (a satellite office, hoping against hope no administrators or certain physicians would show up!) and met Alyssa for lunch, knowing that Dr. G. would be there seeing patients. I have not seen him since December. We've talked on the phone several times, but haven't seen each other at all. He recently announced his retirement. I knew I needed to visit him one day soon, and today seemed like the perfect day with Alyssa being there.
We had a wonderful visit, he was so glad to see me; we sat and talked for close to an hour just catching up. Alyssa and I then left and went for lunch. As we were finishing up our meals, I got a text from Pam (above) wondering where Alyssa was; she had a half day and had decided she wanted to come to see Dr. G, too :-) but Alyssa had locked him in the office, so she couldn't get in. I asked her to stay for a few minutes, that we'd come back right away.
So back in we all went, he had his office door closed, I knocked and walked in saying, "Look what I found wandering the streets of Easton" and in walked Pam. He got this huge smile on his face. It was like old times almost. The three of us chatted for a while, then had Alyssa take a pic of the three of us.
It was time for him to start seeing his afternoon patients, so we headed out, leaving Alyssa and Dr. G. there to carry on. Pam and I decided to go to Wendy's to get drinks and catch up....two hours later (!!) we were leaving. It was wonderful just sitting there and catching up on everything.
Pam said she has a friend that says there are some things that she refers to as a 'God Wink'. We both decided that's what today was. We especially felt that was what today was when I told her that I had planned on doing this last Tuesday, but since I had a cold, I waited until today. She had a half day to take her kids to the dentist, but had to cancel their appts, but chose to keep her half day. As a last minute decision, she decided to stop by to say hi to Dr. G. I think today was just meant to be :)

A Keeper!
Since it was just going to be me and Kurt for Easter dinner (and my Mom), I decided I was not going to any special trouble for dinner. I found this recipe on someone's blog that I follow and thought it looked easy and good! I threw the sauce together last night, then this AM prior to church I threw the chicken in the crockpot and poured the sauce on top and that was that!
I roasted asparagus and brussel sprouts with some olive oil and salt/pepper and made white rice. The only thing I'd do differently is NOT cook the chicken too long ;-) We probably should have eaten an hour earlier...or I should have started it later this am (that was not an option because of leaving for church).

Honey Garlic Chicken
1.5-2 lbs chicken (I used 6 thighs and 3 breasts, so I'd have leftovers)
3 garlic cloves, smashed and chopped (I used the minced stuff in a jar)
1 teaspoon dried basil
1/2 cup soy sauce
1/2 cup ketchup
1/3 cup honey
Put chicken in the crockpot. In a small bowl, combine the rest of the ingredients, then pour evenly on top.
Cook on low for 6 hours or 3-4 hours on high. (They suggest using a 4 quart slow cooker, if using something bigger, it will cook faster. I think that was my problem....I used my 6 quart slow cooker and the chicken cooked almost six hours).

My Favoritest Casserole :-)
I absolutely love this chicken and broccoli casserole. I looked back, I posted pics and the recipe about a year ago, too :-)
And then after supper, I had some after-dinner entertainment ;-) Somehow a plastic grocery bag got caught in the arbor vitae and it was driving me nutty! Every time I looked out the window, for some reason, that was all I'd see! My braniac hubby used a pruning tool and managed to wrestle it out of the tree. It wasn't as easy as it looked like it should have been!

Just Another Wednesday
We are participating in The Cross Project at church. I made a counted cross stitch cross which seemed fitting for me ;-) Members of the congregation were invited to make a cross, using any medium, for display during Holy Week. Slowly, the crosses have been coming in, I'll try and get some pictures of them to post.
This cross is actually bigger than it seems in the picture. The wooden hoop is actually 7 inches in diameter!

I made cupcakes for dessert tonight at church. Clearly, I am not the cupcake baker/icer that Alyssa is ;-)
And then we have this wild and crazy guy!

A Day Spent at Penn State
Milkshakes for all at Baby's:
Breaking Mr. Jesse in right:

Look what showed up for pics while we were there:
Sacks of potatoes:
Dinner at the Happy Valley Brewing Company:
Craziest pic of all! Adam asked Alyssa to bring her cap and gown thinking maybe he wouldn't need to order one of his own. We kind of laughed at the prospect...he's over a foot taller than her....but we obliged. I think he realized the error of his ways when he tried it on!! Note that the bottom of the gown goes to his thighs!
Here's an idea of what it looked like on her in 2011 after her graduation!
And here Adam was being hopeful...now his dreams are coming to fruition!
