Tennessee!

Adam and about 40 fellow Penn Staters spent their spring break on a missions trip in Tennessee. They spent the week hammering, sawing, replacing, painting, fixing, spackling, etc. I asked him to take pictures, he said no, but he'd send me pictures that others took. Well, I'm still waiting for those pics :) Fortunately, there's Facebook! I can't really caption any of them, so just enjoy looking at them:

Heaven's Delight

An oldie, but a goodie :)

2 - 11 ounce cans mandarin oranges, drained

1 - 20 ounce can crushed pineapple, drained

1 cup coconut, packed

2 cups miniature marshmallows

16 oz. container sour cream

Mix together and refrigerate. Enjoy!!

Yummy Easy Granola :)

Preheat oven to 325 degrees. Line a large rimmed baking sheet with parchment paper.

Whisk together:

1/4 cup canola oil

1/4 cup honey

1/4 cup brown sugar

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/2 teaspoon salt

Add 3 cups old-fashioned oats:

Mix together:

Set aside two cups of add-ins. I used 1/2 cup chopped pecans and 1 1/2 cups dried cherries, blueberries, cranberries and plums:

Spread mixture on parchment paper (without add-ins). Bake for 20 minutes or until golden brown, stirring every 5 minutes. Let cool completely:

Add stir-ins:

Divide into re-sealable bags or air-tight container for up to 2 weeks:

Eat with yogurt....YUM :)

They are replacing the bridge. Work began mid January. I have no clue why, but they say the road won't be open until NOVEMBER! Really?!?!?

How long does it take to replace a tiny bridge anyway?!?!? I'm sure it has something to do with some endangered FROG or something!

Happy Birthday Dad

We celebrated three birthdays today. When I ordered the cake, I was afraid there wouldn't be enough room on it to fit all three names on it, so I decided the word DAD would cover them all :) I mean, heck, they're all dads!

Yesterday was Kurt's birthday, and he's dad to Alyssa and Adam. Today is Chris' birthday (Kurt's brother), and he's dad to Kieran, Conor, Colm, Kievah and Mike. And last, but my no means least, today is Matt's birthday (our nephew), and he's dad to Tate, Lydia and Gabe.
